High quality flour should always have the same properties and be best suited for the designated purpose. The art of milling is to compensate for crop-related quality fluctuations by mixing different grain lots and the flours obtained from them.

Therefore, first of all, cereals from the best Austrian growing areas are put together in the optimum ratio.

This mixture then gets thoroughly cleaned and prepared before it is gently ground. After grinding, the flour should be given time to achieve the maturity required for a balanced quality.

Knollmühle has sufficient storage capacity to hold a variety of valuable raw materials, as well as to allow the flour to mature properly.
